To be honest, I'm more of a waffle girl, but every now and then, I crave some fluffy blueberry pancakes and this is my go-to recipe. I recently made some for Taylor by modifying the recipe a bit, but i'll probably stick to the original recipe next time. (Just because they are so much tastier!)
1 cup milk
1 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons melted butter
1+ cup frozen blueberries thawed, or fresh blueberries
more butter for the pan
Combine all dry ingredients in a large mixing bowl.
Add the milk, eggs and butter and whisk until all combined, gently fold in the blueberries.
Add butter to a pan over low heat and grease pan
Pour batter onto pan to form pancakes. Cook pancakes immediately, flipping halfway, on griddle or in pan greased with cooking spray.
Serve warm with syrup & enjoy!
