Blueberry Pancakes
To be honest, I'm more of a waffle girl, but every now and then, I crave some fluffy blueberry pancakes and this is my go-to recipe. I recently made some for Taylor by modifying the recipe a bit, but i'll probably stick to the original recipe next time. (Just because they are so much tastier!)
Ingredients:
- 1 cup milk 
- 1 cup flour 
- 2 tablespoons sugar 
- 1 teaspoon baking powder 
- 1/2 teaspoon salt 
- 1 egg 
- 2 tablespoons melted butter 
- 1+ cup frozen blueberries thawed, or fresh blueberries 
- more butter for the pan 
Directions:
- Combine all dry ingredients in a large mixing bowl. 
- Add the milk, eggs and butter and whisk until all combined, gently fold in the blueberries. 
- Add butter to a pan over low heat and grease pan 
- Pour batter onto pan to form pancakes. Cook pancakes immediately, flipping halfway, on griddle or in pan greased with cooking spray. 
- Serve warm with syrup & enjoy!
